TEMPO.CO, Jakarta - One of Yogya’s Royal Palace authentic recipe is the smoked beef tongue. Its the Sultans’ favorite lunch menu, especially Hamengku Bowono VIII.
“This is a hereditary food from the Hamengku Buwono VIII era and still currently served,” said Kanjeng Raden Tumenggung Jatiningrat, a grandchild of the late Hamengku Buwono VIII.
Jatiningrat or often called Romo Tirun said that until now, the smoked beef tongue is the Royal Family’s favorite menu.
“I also love it.”
The primary ingredient of smoked tongue is a cow’s boiled tongue, cut in big sizes, then clamped with a bamboo. Next, the boiled cow tongue is then smeared with butter and the bamboos are grilled.
Other menu that became the Royal Family’s favorite is the krukup stew. Similar to other regular stews, this menu uses potatoes as its primary ingredient. “But the potatoes are smoothened and blended with stew vegetables,” Tirun said.
There are a few stages in making krukup stew. First, the stew vegetables is covered with the smoothen boiled potato. “Then the mixed chicken, vegetables and potatoes are directly steamed with langseng until cooked,” Tirun said. “It taste wonderful.”
