TEMPO.CO, Jakarta - One of the most wanted signature dishes in Madiun, East Java, is bluder bread. Ananda Vega from Surabaya, who spent the long holiday in Madiun this week, traveled to her hometown to get some bluder bread.
“Every time I go to my hometown, I always buy bluder bread,” Ananda told Tempo at Bluder Cokro bread shop in Madiun on Friday, May 6, 2016.
However, she was disappointed finding that her favorite dish was sold out that day. Therefore, she ordered 20 pieces of bluder bread to be picked up on the next day.
Bluder Cokor master chef Sri Widodo said that his bluder bread was usually sold out before noon.
“During the long weekend like this, we increased the production to 40 percent,” Widodo added.
Widodo revealed that some of her customers were bread shops in Madiun and its neighboring areas, while others are regular consumers.
According to Widodo, the best-selling bluder bread is chocolate-flavored one, in addition to cheese and raisins. Other flavors include peanut, chicken meat floss, beef floss, and pineapple jam. Prices for each bluder bread range from Rp 7,500 (US$57 cents) to Rp 9,500 (US$72 cents).
Widodo said that the bakery was founded by Madam Susana in 1989. Cokro’s bluder bread has been claimed to have high quality texture, color, aroma and flavor.
“The key to making high quality bread is to process the dough manually. Mixer is only used to mix the dough with butter,” Widodo explained.
Bluder bread is commonly found in Madiun. The bread is also produced at bakeries at Jalan Pringgondani and Jalan Kutai and distributed to several bread shops and regular customers.
