TEMPO.CO, Jakarta - Focaccia is one of the most popular bread in Italy. The flat bread is offered with variety of toppings in Indonesia such as spicy tuna, and oncom. Java Focaccia is one of a few restaurants that serves focaccia Nusantara style. It is located on Jalan Pelajar Pejuang, Bandung.
When met during the process of making Nusantara Focaccia, chef Zakky Hamzah of Java Focaccia said the combination of focaccia bread, rendang, and sliced beef is suitable with Indonesian palate. Spicy tuna is another favorite topping in the restaurant.
“Indonesians love salty or savory flavors, therefore the focaccia that is combined with these toppings a la Nusantara does not taste odd in the mouth,” Zakky said.
Focaccia is stealing the spotlight among pastry lovers because of its unique serving and its small portion that is just right to be eaten before lunch.
“Its taste more familiar inside the mouth, differently from pizza that is rather too much because of the dominant cheese, paprika and smoked beef. It (focaccia bread) is very good to be eaten together before lunch,” Cicha Fitriansari, a guest at Java Focaccia told Tempo on Wednesday, February 17.
Focaccia is claimed to be free of preservative and the tender texture is good for people of any age.
