TEMPO.CO, Jakarta - The Kaledo dish or “Donggala cow’s trotters” is a must-try food when you travel to Palu, Central Sulawesi.
One place that provides this culinary is the restaurant “Kaledo Mutiara” on Jalan Layana Indah, Mantikolore District, Palu.
When served, the boiled cow’s trotters doused with clear broth in a bowl. Its appearance and taste are similar to the marrow soup. The difference is that the beef is not seasoned, the broth is clearer and the taste is simpler.
A mixture of onion, salt and lime make the broth taste fresh and delicious. A bowl of chili provided also complement it.
Kaledo can be eaten with cassava that is boiled until tender without spices. It tastes right with the broth and the beef. Rice is also provided as an alternative choice. After eating the beef, there is a marrow that can be eaten inside the trotters.
One portion of kaledo is Rp65,000. One of the workers in the restaurant, Ulfa Yanti, said the restaurant cooks 10 cow’s trotters every day. “Many people come here for lunch, it will be less in the afternoon,” she said.
