“Ricotta could be applied freely, starting from direct consumption to being processed,” Fahmi Widarte, Corporate Chef PT Austasia Food, said after a Ricotta Greenfields launching in Jakarta.
According to Chef Fahmi, Ricotta cheese has a stable texture compared to a Mozzarella and Bocconcini cheese. That's what makes Ricottacheese more flexible to be used as a supporting material for a dish.
If a Mozzarella and Bocconcini cheese are often seen in pizzas or sandwiches, Ricotta cheese can be applied as a jam, pasta, pancake dough or a pancake topping.
Ricotta cheese can be mixed in beverages. Not just that, the Italian cheese can be processed for hot or cold dishes.
In the processing of pasta for instance, the Ricotta cheese scent is more powerful if baked for 5-hours with additions to salt and olive oil.
Chef Fahmi says that Ricotta cheese can be applied with Indonesian food such as bakso (meatball) and pangsit (dumpling).
