TEMPO.CO, Jakarta - A duo of father and son fish farmer Walter Gruell (51 years old) and Patrick (25 years old) have created new kind of caviar that becomes the world’s most expensive caviar.
The food is made from rare albino fish eggs and laced with 22 carat gold to make it worth at about £73,000 (Rp1.4 billion) per kilo.
The Austrian duo said they decided to use the eggs from the sturgeon fish and also chose to include gold leaf as it’s good for the immune system.
“Our Strottarga Bianco comes from the white roe of the extremely rare albino sturgeon,” said Patrick as quoted by Pursuits.
“The taste is very strong and taste distinctly of fresh fish.”
In addition to the good breeding condition, five kilograms of raw white caviar are needed as 80 percent is lost during dehydration.
"It's certainly not a product for everyone, but the market is crying out for new and absolutely exquisite products that chefs around the world can offer their guests" said, Walter Grüll as quoted by CNBC.
The sturgeon fish that produce the caviar inhabit the Caspian Sea. The extremely rare fish is on the brink of extinction that make the caviar an exclusive food.
