TEMPO.CO, Jakarta - One of authentic recipes served in the Yogyakarta Palace is the smoked beef tongue or asin lidah. The food is usually served for lunch as the favorite food of Hamengku Buwono VIII.

“This is hereditary dish, from the era of Hamengku Buwono VII until present, it is still served very often,” said Raden Tumenggung Jatiningrat, the grandson of Sultan Hamengku Buwono VIII when met at Tepas Dwarapuro, Yogyakarta Palace on Thursday, November 6.

Romo Tirun, how Jatiningrat is familiarly known, said that the menu is still favored by the royal family today.

“I like it too,” he said.

The main ingredient of the smoked beef tongue is the cow tongue that is boiled, sliced in thick chunks, and then clamped with bamboo. Next, Tirun explained, the tongue is smeared with butter and spices before it is grilled.

Other than the smoked beef tongue, the kings of Yogyakarta Palace also favor the what-so-called semur krukup. Like other semur, the dish has potatoes as the main ingredient.

“But, the potatoes are mashed and mixed with semur vegetable,” Tirun said.

First step to make the dish is by wrapping chicken or vegetables with boiled, mashed potatoes.

“The chicken, vegetables, and potatoes are then cooked in a langseng,” said Tirun.

“It is so delicious.”
